Roasted Garlic


If you have never roasted garlic, now is the time to try it! The garlic mellows when slowly cooked and it caramelizes to a savory sweetness you will love. My favorite way to use it is with crusty bread, excellent butter and a smear of the roasted garlic. It can also be added to mashed potatoes, or used as an extra layer of goodness on homemade pizza.


Serves 4 generously

 

Ingredients

  • 4 whole garlic bulbs

  • olive oil for drizzling

  • salt and pepper

How to Make It

  • Preheat the oven to 375°

  • Trim the top ¼ inch off the top of the garlic bulb, careful not to cut yourself!

  • Place the garlic cut-side up on a piece of foil, drizzle with olive oil, and sprinkle with salt.

  • Wrap the garlic in the foil and roast for 50 to 60 minutes or until the cloves are deeply golden brown and tender.
